White Lasagna Soup –


Indulge in the creamy elegance of White Lasagna Soup – a comforting bowl of Italian-inspired flavors with sausage, chicken and layers of cheesy goodness.



1 pound Italian sausage, casing removed


1 onion, finely chopped

3 garlic cloves, minced

4 cups chicken broth

1 teaspoon dried basil

1 teaspoon dried oregano


1/2 teaspoon dry thyme

Salt and black pepper to taste Flavor

8 lasagna noodles, cut into pieces

2 cups cooked chicken, shredded

4 cups fresh spinach leaves


1 cup ricotta cheese

1/2 cup grated Parmesan cheese

2 cups grated mozzarella cheese

Fresh basil, chopped (e.g. Garnish )





  1. In a large pot, fry the Italian sausage over medium heat and break it up into crumbles. If necessary, drain excess fat.

2.Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent.

  1. Add chicken broth and add dried basil, dried oregano, dried thyme, salt and black pepper. Bring to a boil.

4.Break the lasagne noodles into pieces and add them to the pot. Cook until the pasta is al dente.

  1. Add the shredded chicken and the fresh spinach leaves and allow to soften.

6.In a small bowl, combine the ricotta cheese and grated Parmesan.

  1. Serve the soup in bowls and add some of the ricotta and parmesan mixture to each portion.
  2. Top with grated mozzarella cheese and garnish with chopped fresh basil.
