Cheesy Ranch Potatoes and Meatballs (Slow Cooker)

This cheesy ranch potatoes and meatballs recipe is a dump-and-go slow cooker dinner: frozen shredded hash browns, fully cooked frozen meatballs, ranch seasoning, condensed cheddar soup, heavy cream and Colby Jack. Everything goes into a 6-quart (or larger) slow cooker and cooks until the potatoes are tender and the meatballs are hot through.
It serves 8 to 10. Active time is about 10 minutes; the cooker does the rest on HIGH in 2 to 3 hours or on LOW in 4 to 5 hours.

How Long It Really Takes
Prep is short because the hash browns and meatballs go in frozen:
- Prep, about 10 minutes: opening the bags, measuring 2 1/2 cups (20 fluid ounces) of cream, shredding the cheese if it is not already shredded, and stirring everything together in the cooker.
- HIGH: 2 to 3 hours, until the hash browns are tender and the meatballs reach 165°F in the center.
- LOW: 4 to 5 hours to the same doneness.
Start checking at the early end of the range. Slow cookers vary, and a very full cooker runs cooler than a half-full one.

Ingredient Notes
Frozen shredded hash browns: One 26-ounce bag, still frozen. Shredded (not diced, not patties) is what gives the dish its tangled potato texture. Do not thaw them first; thawed shreds clump and turn pasty.
Fully cooked frozen meatballs: One 32-ounce bag of homestyle meatballs labeled fully cooked. This recipe is written for fully cooked frozen meatballs that only need to be heated through to 165°F. Do not use raw or uncooked frozen meatballs unless the package and your slow cooker manufacturer both say they are safe to cook from frozen in a slow cooker; raw meatballs need a different method and longer, hotter cooking.
Ranch seasoning: One 1-ounce packet. Ranch mix, condensed cheddar soup and Colby Jack are all salty. Start with one packet. If you want a stronger ranch flavor, stir in up to half of a second packet after tasting near the end of cooking.
Condensed cheddar cheese soup: One 10.5-ounce can. It thickens the sauce and adds cheese flavor. Do not dilute it with water.
Heavy whipping cream: 20 fluid ounces, which is 2 1/2 cups, measured in a liquid measuring cup. Do not assume that two empty soup cans hold exactly 20 fluid ounces; can sizes vary. Measure the cream.

Colby Jack: Two to three cups, shredded. Two cups keeps the sauce spoonable; three cups makes it thicker and cheesier. Shred from a block if you can; bagged shreds are coated with starch and can make the sauce slightly grainy.
Making It in the Slow Cooker
Load the cooker
Put the frozen shredded hash browns and the frozen fully cooked meatballs into a 6-quart or larger slow cooker. A smaller cooker will be too full and may cook unevenly.

Add the sauce ingredients
Sprinkle the ranch seasoning over the top. Add the condensed cheddar soup, the measured cream and the shredded Colby Jack. Stir carefully so the meatballs stay whole and the hash brown shreds start to coat in the sauce. The mixture will look thick and uneven at this stage; it loosens as it heats.

Cook
Cover and cook on HIGH for 2 to 3 hours or on LOW for 4 to 5 hours. Stir once halfway through if you are home, scraping the sides so the potatoes cook evenly. The dish is done when the hash brown shreds are tender (not crunchy in the middle of the cooker) and an instant-read thermometer in the center of a meatball reads 165°F.
Serve
Stir before serving so the sauce coats everything. Spoon into bowls. Crispy bacon, chives or sliced green onions are optional toppings, not part of the base recipe.

Texture and Doneness
The finished dish should have round, recognizable meatballs, tangled shredded potato strands and a thick pale golden-yellow cheddar-ranch sauce that coats a spoon. It is a slow cooker dinner, not an oven casserole, not mashed potatoes and not a soup. If the sauce looks thin early on, keep cooking; the potatoes release starch and the sauce tightens toward the end.
Salt and Richness
Ranch seasoning, condensed cheddar soup and Colby Jack all bring salt and richness. That is why the recipe starts with one ranch packet and no added salt. Taste before serving. If it tastes flat rather than under-salted, black pepper or chives usually help more than more ranch.
Troubleshooting
- Crunchy potatoes in the middle: The cooker was overcrowded, or it needs more time. Stir, scrape the sides and cook another 30 to 45 minutes.
- Sauce too thick: Stir in a splash of milk or cream over HIGH for 10 minutes.
- Sauce too thin: Cook uncovered on HIGH for 15 to 20 minutes, or stir in another 1/2 cup of shredded cheese.
- Broken or grainy sauce: Bagged shredded cheese and boiling can cause this. Keep the cooker on LOW or warm once the cheese is in, and prefer block cheese next time.
- Meatballs still cold in the center: They need more time. Always check 165°F before serving.
Substitutions
- Cheese: Cheddar or a cheddar-Jack blend can replace Colby Jack.
- Turkey meatballs: Fully cooked frozen turkey meatballs work the same way; still heat to 165°F.
- Homemade ranch blend: Mix 1 tablespoon dried parsley, 1 teaspoon dried dill, 1 teaspoon garlic powder, 1 teaspoon onion powder and 1/2 teaspoon salt to replace one packet.
Storage and Reheating
- Refrigerate: Cool, cover and refrigerate within 2 hours for up to 3 to 4 days.
- Reheat: Warm in a covered skillet over low heat with a splash of milk or cream, or microwave in 1-minute bursts, stirring, until steaming hot (165°F).
- Freeze: Freeze in airtight containers up to 2 months. Thaw overnight in the refrigerator. The sauce may look slightly separated; stir well while reheating.

Cheesy Ranch Potatoes and Meatballs Questions
Can I use diced frozen potatoes? This recipe is written for shredded hash browns. Diced potatoes change the texture and need a different liquid balance.
Can I bake it in the oven instead? This article is for the slow cooker only. An oven version would need different timing and a different pan.
Do I have to stir halfway? It helps the potatoes cook evenly, but if you are away, check and stir when you get home and add time if needed.
What size slow cooker do I need? At least 6 quarts. A 4-quart cooker is too small for a 26-ounce bag of hash browns plus a 32-ounce bag of meatballs and the sauce.
