Black bean and chickpea salad –


1 can black beans, drained

1 can chickpeas, drained

Fresh coriander (to taste)

Paprika (yellow-orange or red)


Green scallops in onions

1 to 2 ripe small avocado (diced )

1 can black olives

1 or 2 medium cucumbers, diced or sliced ​​

1/2 or 1 container  grape tomatoes


1 to 2 lemons (fresh juice)

Raw sunflower seeds


Mix all ingredients together. Add as many or fewer fresh vegetables as  you like. Get creative, make this salad colorful and have fun making it. Excellent food for warm climates. I like to eat organic corn and sesame  chips with this.
