Southern-style Crisp Chicken Tray Bake

An easy Southern fried chicken recipe baked in the the oven. Combine chicken wings and drumsticks to make this crispy baked chicken recipe that’s great as a family dinner or party finger food.

  1. 1/3 cup panko breadcrumbs
  2. 1 teaspoon onion salt
  3. 2 teaspoons smoked sweet paprika
  4. 2 teaspoons ground cumin
  5. 2 teaspoons mustard powder
  6. 1 teaspoon ground turmeric
  7. 4 fresh Steggles chicken drumsticks, scored
  8. 4 fresh Steggles chicken wings
  9. ¼ cup extra virgin olive oil
  10. 250g frozen potato shoestring fries
  11. Coleslaw, to serve


Step 1

Preheat the oven, with greased oven tray inside, to 220°C/200°C fan forced

Step 2

Crush panko breadcrumbs using a mortar and pestle or in a resealable plastic bag using a wooden spoon. Transfer crumbs to a large bowl. Add the onion salt, paprika, cumin, mustard powder and turmeric and mix well

Step 3

Add chicken drumsticks, chicken wings and oil to the bowl of coating. Using hands, mix well so chicken is well coated in spice mixture and crumbs. Transfer chicken drumsticks to preheated tray and roast for 10 minutes. Add chicken wings to tray with drumsticks and roast for a further 25 minutes, turning occasionally, or until chicken is golden brown and cooked through

Step 4

At the same time as putting the drumsticks in the oven, place shoestring fries on an oven tray and bake for 25 minutes or until golden brown


Step 5

Serve crisp chicken with the chips and coleslaw
