– 1 pound ground beef
– 1 large onion, chopped
– 3 cloves garlic, minced
– 4 cups beef broth
– 2 cups diced tomatoes (canned or fresh)
– 2 cups potatoes, peeled and diced
– 2 cups carrots, peeled and diced
– 1 cup celery, chopped
– 1 cup green beans, chopped
– 1 cup peas (frozen or fresh)
– 2 tablespoons tomato paste
– 1 teaspoon dried thyme
– 1 teaspoon dried basil
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
– Green onions, chopped (for garnish)



1. **Cook the Ground Beef**:
– In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.

2. **Add Aromatics**:
– Add the chopped onion and garlic to the pot. Sauté for about 5 minutes, or until the onion is translucent.

3. **Add Vegetables and Broth**:
– Stir in the beef broth, diced tomatoes, tomato paste, potatoes, carrots, celery, green beans, and peas. Mix well.

4. **Season the Soup**:
– Add the dried thyme, dried basil, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the vegetables are tender.

5. **Finish and Serve**:
– Taste the soup and adjust seasoning if necessary. Serve hot, garnished with fresh parsley and chopped green onions.
