Garlic Chicken Stir-Fry

 Ingredients:

1 pound boneless, skinless chicken breast, diced

1 tablespoon + 1 teaspoon olive oil, divided

1 yellow  pepper, sliced ​​

1 cup sliced ​​mushrooms

2-3 cups broccoli florets

4 cloves garlic, minced

Salt and pepper to taste

1 tablespoon soy sauce

¾ cup chicken broth

1 ½ teaspoons sugar

2 teaspoons sesame oil

2 teaspoons cornstarch

 Instructions

 

Fry vegetables: Heat 1 tablespoon olive oil in a pan over medium-high heat.Add  broccoli, mushrooms and yellow  pepper. Sauté for 5-6 minutes until the vegetables are tender but still crunchy. Remove from pan, cover, keep warm and set aside.

Cook chicken: In the same pan, add the remaining teaspoon of olive oil. Add the diced chicken breast and season with salt and pepper.Cook until the chicken is no longer pink in the center and is cooked through.

Mix chicken and vegetables: Add the vegetables back to the pan with the chicken and stir.

Prepare the sauce: In a separate bowl, stir together the soy sauce, chicken broth, sugar, sesame oil, and cornstarch until well combined.

Finish the stir-fry: Pour the sauce over the chicken and vegetables in the pan. Stir well to coat everything evenly.Continue cooking for another 2-3 minutes until the sauce thickens and clings to the ingredients.

Serve: For a complete meal, optionally serve the skillet over a bed of fluffy white rice.
