Crockpot Potato Soup couldn’t be  easier and is a great comfort food. It cooks all day in the slow cooker and is ideal for a cold day. For the best potato soup, top with bacon, cheese and scallions. This soup is versatile: add broccoli or ham for a special touch. This will become your favorite crockpot potato soup recipe.I know my husband dreams of us moving to a colder place one day, but I really don’t like cold weather.

I really like it. Today it was 39 degrees here in Florida and I wanted to curl up and do nothing all day. That is normal?


Or do some people feel invigorated by the cold weather?I braved the cold during my college years, and I don’t think I took off my pea coat for the entire four years.


1 30oz. bag  frozen diced fries

1 32 ounce box  chicken broth

1 can  cream of chicken soup (10 ounces)


1 package cream cheese (8 oz, non-fat)

3 oz bacon bits

1 cup shredded cheddar cheese

Salt and pepper to taste



Add the potatoes to the pot. Add  chicken broth, cream of chicken soup and half of the bacon pieces.Add a pinch of salt and pepper.

Simmer for 8 hours or until potatoes are tender.

An hour before serving, cut the cream cheese into small cubes. Place the cubes in the  pot. Stir several times an hour before serving.Once the cream cheese is fully mixed, it is ready to serve.

Top with cheddar cheese and a few additional pieces of bacon
