– 1 lb ground beef
– 1 large onion, diced
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 1 can (14.5 oz) diced tomatoes, undrained
– 4 cups beef broth
– 1 cup heavy cream
– 1 cup shredded cheddar cheese
– 1 cup shredded mozzarella cheese
– 1 teaspoon paprika
– 1 teaspoon cumin
– Salt and pepper to taste
– 1 tablespoon olive oil
– Fresh cilantro, chopped (for garnish)
– Sour cream (optional, for garnish)



1. **Brown the Beef:**
– In a large pot, heat olive oil over medium heat.
– Add the ground beef and cook until browned. Drain excess fat if necessary.

2. **Cook Vegetables:**
– Add the diced onion and cook until softened, about 5 minutes.
