1/2 pounds shredded cooked chicken  (I used cooked rotisserie chicken)


1 tablespoon olive oil

10 Stand and Stuff Tacos (I used Viejo El Paso)

1/2 cup. diced onion

1 can of green chilies 4.5 ounces, chopped and fully drained


1 can diced tomatoes 14.5 ounces, fully drained

Toppings such as sliced ​​Old El Paso jalapenos, sour cream, salsa, chopped cilantro, shredded lettuce or any of your favorite taco toppings.

8oz.Refried Beans 1/2 can

2 c. Shredded Mexican Blend Cheese

 How to Make Baked Chicken Tacos


Step 1: Prepare the oven. Preheat  to 400 degrees F. Grease a 9 x 13 inch baking dish with nonstick spray.

Step 2: In a medium skillet, heat the olive oil over medium heat.Once hot, add the onion and sauté until clear and aromatic, about 2 to 3 minutes.

Step 3: Add  chicken, taco seasoning, fully drained tomatoes and green chiles. Stir well until completely mixed. Reduce the heat to a simmer and let it cook for about 5 to 8 minutes.

Step 4: Place the standing tacos in the baking dish.Place the baking dish in the preheated oven and bake the tacos until crispy, about 5 minutes. Take them out of the oven when they are done.

Step 5: Add 1 tablespoon of beans to the bottom of each taco. Place the chicken on top and then sprinkle generously  with grated cheese. Return to the oven and bake the tacos for another 7 to 10 minutes or until the cheese is completely melted and the edges of the shells are golden brown.Step 6: Before serving, top the tacos with your favorite toppings like jalapenos, sour cream, cilantro, and salsa.
