No-Bake Peanut Butter Lasagna (Chocolate Cookie Crust)

This peanut butter lasagna is a no-bake layered dessert in a 9×13-inch dish: a chocolate sandwich-cookie crust, a thick peanut butter cream layer, firm chocolate pudding, whipped topping, chopped mini peanut butter cups and a chocolate syrup drizzle. It is not pasta lasagna and it never goes in the oven.
It serves about 15. Active work is about 30 minutes, then the pan needs at least 4 hours in the refrigerator so the layers set for clean slices.

Whipped Topping Amount (Read This First)
Some versions list one 8-ounce tub “divided” and also list a second tub for the top, which confuses the total. This recipe uses two full 8-ounce containers of thawed frozen whipped topping (16 ounces total):
- Peanut butter filling: fold in 1 full 8-ounce container.
- Top layer: spread the second full 8-ounce container.
Do not divide a single tub, and do not buy a third. Every ingredient list and step below matches that rule.

How Long It Really Takes
- Prep, about 30 minutes: crushing cookies, pressing the crust, beating the peanut butter layer, whisking pudding and assembling.
- Brief crust chill: 10 to 15 minutes while you make the filling (counts inside the prep window).
- Pudding stand time: 3 to 5 minutes after whisking so it thickens before spreading.
- Chill: at least 4 hours, overnight preferred, until the pan slices cleanly.
Card times: 30 minutes prep, 4 hours chill (no baking), about 4 hours 30 minutes total.
Ingredient Notes
Chocolate sandwich cookies: Thirty-six cookies, finely crushed (filling and all). A food processor is fastest; a bag and rolling pin work. Mixed with 6 tablespoons melted butter and packed firmly, the crust holds for slicing.
Cream cheese and peanut butter: Eight ounces cream cheese, fully softened, plus 1 cup creamy peanut butter and 1 cup powdered sugar. Soft cream cheese prevents lumps. One tablespoon milk loosens the mixture just enough to fold in the whipped topping.
Instant chocolate pudding: Two 3.4-ounce boxes with 3 cups cold milk. That is less milk than many box “pudding” directions, on purpose, so the layer stays firm enough for a lasagna-style dessert. Use instant, not cook-and-serve.
Whipped topping: Two 8-ounce containers, thawed in the refrigerator. One goes into the peanut butter layer; one goes on top.

Mini peanut butter cups and syrup: About 1 cup roughly chopped cups and a chocolate syrup drizzle. Chop by hand so the pieces look irregular.
Assembling the Lasagna
Make the cookie crust
Lightly grease a 9×13-inch glass baking dish or mist it with nonstick spray. Mix the cookie crumbs with the melted butter until the crumbs look like damp sand. Press the mixture firmly into an even layer on the bottom of the dish. Chill 10 to 15 minutes while you make the peanut butter layer.

Spread the peanut butter layer
Beat the softened cream cheese, peanut butter, powdered sugar and milk until smooth and fluffy, scraping the bowl. Fold in one full 8-ounce container of whipped topping until no white streaks remain. Spread over the chilled crust in an even layer, reaching the corners without digging into the crumbs.

Add the chocolate pudding layer
In a separate bowl, whisk the instant chocolate pudding mixes with 3 cups cold milk until thickened, 2 to 3 minutes. Let stand 3 to 5 minutes until softly set. Gently spread over the peanut butter layer. Soft set pudding spreads cleaner and is less likely to streak into the layer below.

Top, chill and slice
Spread the second full 8-ounce container of whipped topping over the pudding. Sprinkle the chopped mini peanut butter cups over the top and drizzle with chocolate syrup. Cover and refrigerate at least 4 hours (overnight is better). Slice into about 15 squares with a knife wiped clean between cuts.

Texture and Layers
You should see four clear bands in a slice: dark cookie crust, pale tan peanut butter cream, darker chocolate pudding and an off-white whipped topping, finished with irregular peanut butter cup pieces and syrup. Layers should be distinct, not muddy. Soft handmade spatula marks on the topping are normal.
Troubleshooting
- Crust crumbles when sliced: It was not packed firmly enough, or the butter was short. Press hard next time and keep the full 6 tablespoons butter.
- Peanut butter layer too stiff to spread: Cream cheese was cold, or the mixture needs another teaspoon of milk. Soften the cheese fully next time.
- Pudding layer runny: Milk was warm, or you used cook-and-serve pudding. Use cold milk and instant pudding; wait the 3 to 5 minutes before spreading.
- Layers smear: The pudding was too loose, or you sliced before a full 4-hour chill. Chill longer and wipe the knife between cuts.
- Too sweet: Use a light hand on the syrup drizzle; the cups and pudding already bring sweetness.
Substitutions
- Cookie brand: Any chocolate sandwich cookie of similar size works; keep the count near 36 for a 9×13 crust.
- Natural peanut butter: Stir it very well first. If the filling seems loose, chill 10 minutes before spreading; natural oils can soften the layer.
- Homemade whipped cream: You can replace each 8-ounce tub with about 3 cups softly whipped cream (from about 1 1/2 cups heavy cream), sweetened lightly. Texture is softer and less stable than frozen whipped topping — keep the pan cold and serve within 2 days.
Storage
- Refrigerate: Keep covered and cold for up to 3 to 4 days.
- Freeze: Not recommended for this version; pudding and whipped topping can turn watery when thawed.
- Make ahead: Best made the day before serving so the chill window is overnight.
