VEGGIE – Harvest Roasted Vegetables with Dried Avocado and Coconut Rice

Cook time: 45 minutes
Total time: 457 minutes Peeled, grated, topped with nuts and seeds (about 1 cup to 1/2 cup ) raw Brussels sprouts, stems and cut in half
2 tablespoons olive oil
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
2 teaspoons maple syrup
pinch of salt and pepper
1/2 cup peanuts with walnuts
1/2 cup goat cheese or blue cheese, ground pomegranate seeds
(such as pomegranate seeds) or may contain dried coconut
Cocoa rice
1 cup uncooked jasmine rice
1 cup light, coconut milk
3/4 cup coconut water
., fruit juice
1/4 teaspoon red Thai paste (optional)
3/4 teaspoon rice flour (I used spicy rice flour)
1 8 teaspoons ginger
1 teaspoon honey
salt and pepper to taste

Instructions

1 .Preheat the oven to 425 degrees F. or 220 degrees C.

2. Stir in a small amount of olive oil, paprika flour, paprika, maple syrup and a pinch of salt and pepper.

3. Divide the vegetables into one or two layers in a single layer. Pour olive oil over the vegetables and mix well. Roast for 35 to 45 minutes, pulling the meat halfway through, until the vegetables are tender and starting to brown. In the last 15 minutes, add the walnuts and mix.

4. While the meat is browning, start the rice. Add the coconut milk and coconut water to a large pot. Bring to a boil and add rice, salt, coconut and coconut oil. Stir to combine, cover pan and reduce heat to low. Leave the rice to cook over low heat for ten minutes, then turn off the heat completely and leave the rice on the heat, covered, for another 20 minutes (don’t touch the inside!). After 20 minutes, remove the lid from the
and combine the rice. Remember that rice can be cooked differently for everyone, and this is what worked for me.

5. Prepare the fried avocado. Remove these and gently scrub the avocado. Stir in cilantro, jalapeño, lime juice, curry powder, honey, ginger, cayenne and a pinch of salt and pepper. Lightly puree again.

6. To assemble your bowls, add rice to each bowl and top with roasted veggies and a piece of avocado. Finish with goat cheese or blue cheese, toasted walnuts and almonds. Work
