Mulligan Stew, often associated with hobo culture, is a hearty, improvised dish traditionally made with whatever ingredients are available. While the original concept of Mulligan Stew was to use whatever you had on hand, a more structured recipe can provide a comforting and flavorful experience. Here’s how to make a version of Mulligan Stew at home.

 Ingredients:

  • 1 pound beef stew (or any available meat), cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 4 cups beef broth (or any available broth)
  • 2 large potatoes, peeled and cut into cubes
  • 2 carrots, peeled and sliced ​​
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried thyme
  • 2 bay leaves
  • Optional : Any other vegetables you have on hand, e.g. E.g. celery, peppers or green beans.

STEP 1: BROWNING THE MEAT
1. Heat the vegetable oil in a large pot over medium-high heat.
2. Add the beef cubes and fry until all sides are golden brown. Remove the meat and set aside.STEP 2: FRY VEGETABLES
1. In the same pot, add the chopped onion and minced garlic. Sauté until the onions are translucent and fragrant.
2. If you have other fresh vegetables, add them in this step to soften them a little.STEP 3: DELADDING AND SHALLOW COOKING
1. Pour some beef broth into the pot, scraping the bottom to loosen any browned bits (this will add flavor to the stew).
2. Return the browned meat to the pot. Add remaining beef broth, diced tomatoes (with juice), potatoes, carrots, salt, pepper, dried thyme and bay leaves.3. Bring the mixture to a boil and then reduce the heat to low. Cover and simmer for about 1 to 1.5 hours, or until the meat is tender.
STEP 4: ADD FROZEN VEGETABLES
1.Add the frozen peas and corn to the pot. If using other frozen or quick-cooking vegetables, add them now.
2. Simmer the stew for another 15-20 minutes, or until all the vegetables are cooked.
STEP 5: ADJUST SPICE AND SERVE 1.Taste the stew and adjust seasonings with additional salt and pepper if necessary.
2. Remove the bay leaves before serving.
3. Serve hot, with crusty bread for dipping on the side.Tips:
• Mulligan Stew is incredibly versatile. Feel free to use whatever meat or vegetables you have on hand. The idea is to prepare a nutritious meal using the ingredients available.
• For a thicker stew, you can mix 2 tablespoons of flour or cornstarch with a little cold water until it forms a paste. Add this to the stew and simmer for another 10 to 15 minutes until it thickens.• This stew tastes even better the next day because the flavors have more time to meld.
