Mozzarella Filled Soft Cracker



-1 1/2 cups warm water
-1 pack of dry yeast
-1 teaspoon whole sugar
-4 cups all-purpose flour
-1 teaspoon salt
– 1/ 4 cup salted butter, melted
-250 grams mozzarella cheese, chopped
-10 cups water
-2/3 cup baking soda
-1 egg, beaten (to wash the eggs)
-Plenty of salt (for sprinkling)


1. Prepare the dough:
– Mix hot water and sugar in a large mixing bowl. Sprinkle the yeast on top and let it sit for about 5 minutes or until it becomes powdery.
– Add the flour, salt and melted butter to the yeast mixture. Mix until the dough comes together.
– Place the dough on a floured surface and knead for about 5-7 minutes or until smooth and elastic. Place the dough in a lightly oiled bowl, cover and let rise in a warm place for 1 hour or until doubled in volume.


2. Prepare the przel:
– Preheat the oven to 230°C. Cover two baking trays with baking paper.
– When the dough has risen, hit it and divide it into 8 equal parts. Roll each piece into a rope about 50 cm long.
– Pull the string gently and place a piece of mozzarella cheese in the middle. Place the dough on top of the cheese and press well.
– Shape the dough into a bagel and place on the prepared baking tray.

3. Preparing Przel:
– Boil 10 glasses of water and baking soda in a large pot. Gently drop each pretzel, one at a time, into the boiling water for 30 seconds. Remove them with a slotted spoon and place them back on the baking tray.
– Brush each cracker with beaten egg and sprinkle generously with salt.
4. Preparation of the prize:

– Bake in a hot oven for 12-15 minutes or until golden brown.
– Remove from the oven and let it cool before serving.
