Ingredients

  1. 2 large eggs
  2. ¼ cup heavy whipping cream
  3. 1 tablespoon white sugar
  4. 1 pinch salt
  5. 1 pinch cayenne pepper
  6. ¼ teaspoon ground cinnamon
  7. ⅛ teaspoon ground allspice
  8. 4 thick slices day-old French bread
  9. 1 tablespoon butter
  10. 8 thin slices cooked ham
  11. 4 slices Cheddar cheese
  12. 4 slices Havarti cheese
  13. 8 poached eggs
  14. 2 teaspoons chopped fresh chives, or to taste
  15. 1 pinch kosher salt, or to taste
  16. 1 pinch cayenne pepper, or to taste
