Ginger Sweet Potato & Coconut Drain Stew

 

Ingredients:

 

2 tablespoons coconut oil
1 onion, diced
2 cloves garlic, minced
1 tablespoon new ginger, grated
2 huge sweet potatoes, peeled and diced
1 can (14 ounces) chickpeas, depleted and rinsed
1 can (14 ounces) diced tomatoes
1 can (14 ounces) coconut milk
2 mugs vegetable broth
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper (discretionary, for heat)
Salt and dark pepper to taste
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)

In a huge pot, warm coconut oil over medium warm. Include diced onions and cook until softened.
Add minced garlic and ground ginger to the pot. Cook for an extra 1-2 minutes until fragrant.
Stir in diced sweet potatoes, chickpeas, diced tomatoes, coconut drain, and vegetable broth.
Add ground turmeric, ground cumin, ground coriander, cayenne pepper (in case utilizing), salt, and dark pepper. Blend to combine.
