  • 250 grams of granulated sugar
  • 60 grams of unsalted butter
  • 200 ml cream (33% fat)
  • 120 grams of high-quality chocolate


 1 Prepare caramel:

  • In a pot with thick base, carefully heat the sugar over medium heat. Stir constantly to avoid burning. The sugar initially collects but  eventually melts and turns into a thick amber liquid.• Once the butter is completely melted, carefully add the butter. The mixture will form bubbles, so stir constantly until the butter is completely melted and incorporated into the caramel.
  • Slowly pour in the cream while stirring. Again, be careful as the mixture will form bubbles. Continue stirring until  a smooth, consistent caramel forms.Remove from heat and let  cool slightly.
  1. Chocolate preparation:
  • Break the chocolate into small pieces and melt them carefully. You can use the double boiler method or melt it in the microwave in 20 second increments, stirring in between until completely smooth.

 3.Assemble the cake:

  • Choose the mold or glass you want to use to form your cake. Pour the slightly cooled caramel onto the base, filling it about a third full.
  • Allow the caramel to harden slightly in the refrigerator for about 10 minutes. Once the cake has some structure, carefully pour the melted chocolate over the caramel layer and fill until the desired height of your cake is reached.

 4.Prepare the cake:


  • Place the cake in the fridge to set completely. This may take 1-2 hours depending on the size and thickness of the cake.
  1. Servings:
  • As soon as the cake is firm, we carefully remove it from the mold. If necessary, run a knife over the edge to loosen it.• Serve garnished with additional whipped cream, fresh bayas or one of these Sprinkle sea salt for an extra layer of flavor.
