Cheesy Potato Cakes

 

Ingredients:

• 4 large potatoes
• 1 cup shredded mozzarella cheese
• 1/4 cup grated Parmesan cheese
• 2 tablespoons butter
• 2 tablespoons olive oil
• Salt and pepper to taste
• Fresh parsley, chopped (for garnish)

Instructions:

1. Prepare the Potatoes:
• Peel the potatoes and cut them into thick slices.
• Boil the potato slices in salted water until they are just tender but not falling apart. This should take about 10-15 minutes.
• Drain the potatoes and let them cool slightly.
2. Pan-fry the Potatoes:
• Heat the butter and olive oil in a large skillet over medium heat.
• Add the potato slices to the skillet and fry them until they are golden brown on both sides, about 4-5 minutes per side.

3. Add the Cheese:
• Preheat your oven to 400°F (200°C).
• Place the fried potato slices on a baking sheet lined with parchment paper.
• Sprinkle the shredded mozzarella and grated Parmesan evenly over the potato slices.
4. Bake:
• Bake the potatoes in the preheated oven until the cheese is melted and bubbly, about 5-7 minutes.
5. Garnish and Serve:
• Remove the potato cakes from the oven and sprinkle with chopped fresh parsley.
• Serve hot as a side dish or appetizer.
