Caramel ice cream powder

 

Ingredients:

1 cup brown sugar
1/4 cup water
2 tablespoons butter
2 cups cream
1 cup whole milk
4 large egg yolks
1 teaspoon vanilla extract
One pinch of salt
Directions:
Combine brown sugar and water in a saucepan over medium heat. Stir until the sugar dissolves.
Add the butter to the pan, melt it and mix well with the sugar mixture.
Add whipped cream and whole milk. Stir constantly until the mixture is smooth and begins to thicken. Remove from heat.
Place the egg yolks in a separate plate. Slowly whisk 1 cup of hot cream into the yolks until thickened.
Pour the egg mixture back into the pan with the remaining cream mixture, stirring constantly.
Place the pan back on low heat. Cook the mixture, stirring occasionally, until it thickens and coats the back of a spoon (5-7 minutes). Don’t let them cook.
Remove from heat and add vanilla extract and salt and mix. Pour the mixture through a fine strainer into a thin plate.
Cover the bowl with plastic wrap and press the protective sheet to protect the skin. Refrigerate for at least 4 hours or until completely cooled.
Once cooled, place the pudding into the ice cream maker according to the manufacturer’s instructions.
