Beef Baked Potatoes

 

Ingredients:
5 medium potatoes, peeled and peeled
1 tablespoon butter
1/4 cup milk
Salt and pepper to taste
1 ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 cup smoked paprika
1/2 cup dried red pepper
1/2 cup ground meat
1/2 cup frozen peas and carrots
1 cup grated cheese (cheddar or your choice)
Preparation:
Prepare the potatoes: Large In a pot, close the lid and boil the potatoes with water. Bake until spring, 15-20 minutes. Drain the potatoes and return them to the pot.
To make mashed potatoes: Add oil and milk to boiled potatoes. Process until smooth and creamy. Add salt and pepper. Set aside to cool slightly.
Prepare the beef filling: While the potatoes are cooking, heat a pan over medium heat. Add the beef and onion, cook until the beef is browned and the onion is translucent. Add the garlic, smoked paprika powder and thyme and fry for a minute.
Play: Pour it down the cow’s throat and bring it. Add the frozen peas and carrots and cook until the vegetables are tender and the liquid has reduced slightly, about 5 minutes. Season with salt and pepper.
Assemble the boats: Preheat your oven to 190°C. Transfer the baked potatoes to a baking sheet and make a “boat” shape, making a well in between each mound.
Fill the boat: Spoon the ground meat mixture into the cavities of the roast potatoes.
Adding cheese: Sprinkle the cheese over the stuffed potato slices.
Baking: Place potato wedges in preheated oven and bake for 10-15 minutes or until cheese is melted and bubbly.
Serving tip: Serve hot, garnished with chopped parsley or chives to add flavor and colour.
