Traditional Chicken A La King Recipe

 

Chicken a la king is a hearty dish made with butter and chicken, peas, bell pepper, mushrooms and red pepper. Serve over a bed of rice or soft biscuits for a delicious and filling meal. 977 white mushroom, chopped
1 small yellow onion, chopped
1 green onion
2 cloves garlic, chopped
½ teaspoon dry mustard
½ cup all-purpose flour
2 cups chicken broth
1 ½ cups
1 water cup frozen peas
7 ounces chopped red pepper
3 cups cooked, diced or shredded chicken

Directions

In a large pot or Dutch oven, melt the butter over medium heat.
Add the mushrooms and cook for 2-3 minutes. Add onion and greens, cook until vegetables are soft and mushrooms are browned.
Turn the heat to medium and add the garlic and dry mustard. Sprinkle in the flour while continuing to mix. Cook and stir for about 2 minutes. Gradually pour in the chicken broth and mix everything. Mix until it thickens.
Reduce heat to low and stir in half, peas, red pepper and cooked chicken. Continue cooking and stirring until done. If the mixture becomes too thick, add a quarter cup of chicken broth at a time to achieve a thick consistency. Serve with rice, pancakes, toast, cookies or puff pastry.

Take time to collect mushrooms. It tastes better this way and the meal is much more interesting.
Don’t get too hung up on mixing flour with mushrooms, onions and peppers. Once you add the flour and milk, everything will be fine. Strain the chili carefully because you do not want the juice to add flavor or color to your dish.
Frozen peas are the most delicious in this dish. They retain their color, texture and flavor during cooking much better than raw or fresh.
For lower fat content, reduce butter and cream by half. It will still taste good, but not as rich.
If the mixture is too thick, add chicken broth, a quarter cup at a time, to thicken.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Heat in the microwave on low power or on the stove.
Great, really great at first. Then place them in freezer bags. Place freezer bags in a single layer on parchment paper and place the paper in the freezer. Once completely cooled, place the bags on the side of the refrigerator to save space. Put it in the refrigerator overnight.
