These Apple Oatmeal Cookies are packed with oats, fresh apples, and cinnamon! They lost track of time in my house!
Ingredients:
1 cup (125 grams) all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon baking powder
1/4 teaspoon salt

1 and 3/4 cups (175 grams)
115 grams salted butter, softened
100 grams brown sugar, packed
50 grams granulated sugar
1 large, at room temperature
1 1 teaspoon vanilla extract
1 cup (120 grams) chopped apple
Makes:
Preheat the oven to 377°. . Line two large baking trays with baking paper or baking trays.
In a large mixing bowl, combine flour, cinnamon, nutmeg, baking soda and salt. Stir in rolled oats.
Beat the butter, brown sugar and powdered sugar with a mixer for 1-2 minutes until smooth. Mix the eggs with vanilla extract.
Add dry ingredients to wet ingredients and mix until combined. Gently fold in sliced apples.
Using a 1.5 teaspoon cookie scoop, drop the dough balls onto the prepared sheet.
Bake for 12-15 minutes or until the top of the cookie is set.
Let cool on the baking tray for 5-10 minutes and then transfer to a wire rack to cool completely.
