Ingredients:

– 1 package (15 count) phyllo dough cups
– 1 pound ground beef or turkey
– 1 small onion, finely chopped
– 1 packet taco seasoning mix
– 1/2 cup water
– 1 cup shredded cheddar cheese
– 1 cup shredded Monterey Jack cheese
– 1 cup diced tomatoes
– Fresh cilantro, chopped (for garnish)

Instructions:

 

1. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C).

2. **Cook the Ground Meat:**
– In a large skillet, cook the ground beef or turkey over medium heat until browned, breaking it up with a spoon as it cooks.
– Add the finely chopped onion and cook until softened, about 3-4 minutes.
– Drain any excess fat from the skillet.

3. **Add Seasoning:**
– Stir in the taco seasoning mix and water.
– Simmer for about 5 minutes until the mixture is well combined and heated through.

4. **Assemble the Phyllo Cups:**
– Arrange the phyllo dough cups on a baking sheet.
– Spoon a small amount of the taco meat mixture into each phyllo cup, filling them almost to the top.
