Spinach and Cheese Pie (Spanakopita)

 

 

Ingredients:

– **Filling:**
– 2 lbs (900g) fresh spinach, washed and chopped (or 1 lb frozen spinach, thawed and drained)
– 1 large onion, finely chopped
– 3-4 green onions, finely chopped
– 2 cloves garlic, minced
– 1/4 cup fresh parsley, chopped
– 1/4 cup fresh dill, chopped
– 1/2 cup feta cheese, crumbled
– 1/2 cup ricotta cheese
– 1/4 cup grated Parmesan cheese
– 3 large eggs, lightly beaten
– Salt and pepper to taste
– 2 tablespoons olive oil

– **Crust:**
– 1 package phyllo dough, thawed
– 1/2 cup unsalted butter, melted (or olive oil)

1. **Prepare the Filling:**
1. In a large skillet, heat the olive oil over medium heat.
2. Add the chopped onions and green onions, sauté until translucent (about 5 minutes).
3. Add the garlic and cook for another minute.
4. Add the chopped spinach (if using fresh) and cook until wilted. If using frozen spinach, just stir it in until well combined and heated through.
5. Remove from heat and let the mixture cool slightly.
6. In a large bowl, combine the spinach mixture, parsley, dill, feta cheese, ricotta cheese, Parmesan cheese, and beaten eggs. Season with salt and pepper to taste.

2. **Assemble the Pie:**
1. Preheat your oven to 375°F (190°C).
2. Grease a 9×13-inch baking dish with olive oil or butter.
3. Lay a sheet of phyllo dough in the baking dish, allowing the edges to hang over the sides. Brush the phyllo sheet with melted butter or olive oil.
4. Continue layering and brushing with butter or oil, using about half of the phyllo sheets.
5. Spread the spinach and cheese filling evenly over the layered phyllo dough.
6. Continue layering the remaining phyllo sheets on top of the filling, brushing each sheet with butter or oil.
7. Fold the overhanging edges over the top to seal the pie.
8. Using a sharp knife, score the top layers into squares or diamonds.

3. **Bake:**
1. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and crispy.
2. Allow the pie to cool slightly before cutting into pieces and serving.
