Simple meatball soup

ingredients:

meatballs
▢1 Lean cattle meat
▢1 Large egg
▢½ cup of finely chopped white onion
▢ cup of long -grained white rice
▢3 finely chopped cloves of garlic
▢2 teaspoon of salt and more like taste
▢1 teaspoon ground cumin
▢1 teaspoon garlic powder
▢½ teaspoon ground black pepper
▢½ teaspoon dried oregano
Soup
▢48 ounces low-sodium chicken broth
▢15-ounce can crushed tomatoes, undrained
▢ 3 large carrots , peeled and cut into 2.5 cm pieces
▢ 3-4 large russet potatoes, about 4.5 kg, peeled and cut into 2.5 cm pieces
▢ 2 zucchini, about 340 g, chopped once, in 2 .5 cm pieces cut
▢Optional: freshly chopped coriander and lime wedges

Introduction:

Place the ground beef, egg, onion, rice, garlic, salt, cumin, garlic powder, pepper and oregano in a large bowl and mix with your hand or Stir with a spoon until everything is combined.
Form 5 cm balls out of the mixture and place them on a plate for later.
Add the chicken broth and crushed tomatoes to a large stock pot or saucepan and bring to a boil over medium-high heat.
Carefully add the meatballs to the stock and cook for 10 minutes, then add the carrots, potatoes and zucchini to the pot and cook for another 5 minutes, then reduce the heat to medium-low.
If necessary, add 2-3 cups more water and simmer for another 10-15 minutes, or until the vegetables are tender.Remove the pan from the heat and allow to cool for 5 minutes before serving with freshly chopped cilantro and lime wedges.
