This quick and easy recipe for Red Pepper Jelly makes a perfectly balanced jam that’s sweet, salty, and slightly spicy. Enjoy with cheese and crackers or use as a side dish with meat and vegetables. Only 5 ingredients!

red pepper or 2 & 1/2 cups finely chopped
2 jalapeno peppers or 1/4 cup finely chopped
6 & 1/2 cups mixed sugar
1 & 1/2 cup apple cider vinegar
1 bag (3 ounces) water pectin

Directions
Core and stem peaches and chop into roughly 1-inch pieces. Place the peppers in a food processor and pulse until the peppers are very finely chopped, but not pureed. Measure out 2 and 3/4 cups of chili mixture.
Place 2 and 3/4 cups pepper powder, sugar, and vinegar in a shallow pan or pot. Bring the mixture to a rolling boil and then cook, stirring, for 1 minute.
Quickly press the pectin bag and cook for 1 minute (use a timer to ensure it cooks for the full minute). Remove the pan from the stove, wipe off any foam that forms on top, and discard.
Pour into clean jars and let cool to room temperature. Then place the jars on the lids. You can use it immediately or save it for later. (Proper storage and storage instructions are included with the product.)

Sugar quantity. It seems like a lot of sugar, but it is necessary to set the jelly correctly. Also note that this recipe makes 7.8 cups. This recipe has not been tested with sugar substitutes.
Use of different types of peppers. Any type of pepper can be used in this pepper jelly, such as poblanos, anaheims, or orange peppers. You can also make jalapeno jam by using more jalapeno peppers. Habaneros are a good substitute for jalapenos if you want extra spice. MOST IMPORTANTLY, measure the diced peppers into 2 and 3/4 cups and stick to the quantity.
