Pineapple Chicken Fried Rice Recipe

 

 

 

**Ingredients:**

– 2 cups cooked jasmine rice (preferably day-old)
– 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
– 2 cups fresh pineapple chunks
– 1 red bell pepper, diced
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 2 green onions, chopped (plus more for garnish)
– 2 tablespoons soy sauce
– 1 tablespoon oyster sauce
– 1 tablespoon fish sauce
– 1 tablespoon vegetable oil
– 1 teaspoon sesame oil
– 1 teaspoon sriracha (optional, for heat)
– 1 lime, cut into wedges (for serving)

Instructions:

 

**1. Cook the Chicken:**
1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
2. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
3. Remove the chicken from the skillet and set aside.

**2. Stir-Fry the Vegetables:**
1. In the same skillet, add a bit more oil if needed.
2. Add the chopped onion and cook until translucent.
3. Add the minced garlic and cook for another 30 seconds until fragrant.
4. Add the diced red bell pepper and pineapple chunks, and stir-fry for about 3-4 minutes.

**3. Add the Rice:**
1. Push the vegetables to the side of the skillet and add the cooked rice.
2. Drizzle the soy sauce, oyster sauce, and fish sauce over the rice.
3. Add the sesame oil and sriracha (if using), and stir everything together until well combined.

**4. Combine and Serve:**
1. Add the cooked chicken back into the skillet along with the chopped green onions.
2. Stir everything together and cook for another 2-3 minutes until heated through.
3. Remove from heat and garnish with additional green onions.

**5. Serve:**
1. Serve the pineapple chicken fried rice with lime wedges on the side for squeezing over the top.
