**Ingredients:**

For the filling:
– 4 cups of fresh or canned peaches (if using canned, drain the syrup)
– 1 cup granulated sugar
– 1/2 cup brown sugar
– 1/4 teaspoon salt
– 1 teaspoon ground cinnamon
– 1 teaspoon ground nutmeg
– 1 tablespoon lemon juice
– 1 teaspoon vanilla extract
– 2 tablespoons cornstarch (optional, for a thicker filling)

For the topping:
– 1 cup all-purpose flour
– 1 cup granulated sugar
– 1 cup milk
– 1/2 cup unsalted butter, melted
– 1 teaspoon baking powder
– 1/2 teaspoon salt

**Instructions:**

1. **Preheat the oven:** Preheat your oven to 375°F (190°C).

2. **Prepare the filling:**
– In a large bowl, combine the peaches, granulated sugar, brown sugar, salt, cinnamon, nutmeg, lemon juice, and vanilla extract.
– Mix well to coat the peaches evenly. If you prefer a thicker filling, add 2 tablespoons of cornstarch and mix well.

3. **Prepare the baking dish:**
– Pour the peach mixture into a 9×13-inch baking dish, spreading it out evenly.

4. **Make the topping:**
– In another bowl, combine the flour, granulated sugar, milk, melted butter, baking powder, and salt. Stir until the batter is smooth and well combined.

– Pour the batter evenly over the peach filling in the baking dish. The batter will spread as it bakes, so there is no need to spread it perfectly.

6. **Bake:**
– Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the topping is golden brown and a toothpick inserted into the center of the topping comes out clean.

7. **Serve:**
– Allow the cobbler to cool slightly before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
