One Cup Lemon Orzo Pasta

 

 

Ingredients:

• 1 teaspoon salt
• 1½ cups uncooked orzo pasta
• 2 cloves garlic, minced
• 2½ cups low-sodium vegetable or chicken broth
• ½ teaspoon salt
• ¼ teaspoon fresh black pepper
• butter (heavy or light, depending on preference)
• 2 tablespoons grated Parmesan cheese
• 2 tablespoons fresh parsley, chopped
• juice of 1 lemon

Instructions:
1. Cook the pasta: Melt the butter. in a large skillet over medium heat. Add orzo and garlic and fry for 1-2 minutes.
2. Add water: Add the blood, salt and pepper. Bring to a boil, reduce heat to medium, cover and cook, stirring frequently, until most of the liquid is absorbed, about 10 minutes.
3. Final touches: Add the cream, Parmesan cheese and parsley and mix. Add lemon juice slowly according to your taste.
