Olive Garden Chicken Gnocchi Soup 

 

Ingredients:
3-4 skinless chicken breasts – cooked and seasoned
1 stalk celery – chopped
½ white onion – finely chopped
2 meals spoon minced garlic
½ cup grated carrots
1 tablespoon olive oil
4 cups baking soda chicken
salt and pepper – to taste
1 tablespoon tme
16 ounces potato gnocchi
cup half-and-half – see text

1 cup fresh spinach – coarsely chopped
Directions:

Heat the olive oil in a large skillet over medium heat. Add celery, onion, garlic and carrots and fry for 2-3 minutes until the onion becomes translucent.
Add the chicken, chicken broth, salt, pepper and thyme, bring to a boil and gently stir into the gnocchi. Cook for 3-4 minutes, then reduce the heat to low and cook for 10 minutes.
Stir in half the spinach and cook for another 1-2 minutes until the spinach is soft. Taste, add salt and pepper if necessary and serve.
