Ingredients
1/2 cup orzo pasta, uncooked
peppers
2 ounce can chopped black olives
1 cup finely chopped spinach
1 whole spring onion, chopped
3 tablespoons crumbled feta cheese
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons extra virgin olive oil
4 teaspoons red wine vinegar
1 teaspoon lemon juice

Directions
Cook orzo according to package directions until al dente, 10 minutes; Drain and place in a medium bowl.
Add the rest.
Season and adjust seasoning to your taste.
Serve hot or cold and enjoy!
