 Ingredients:

**For the Mashed Potatoes:**
– 2 cups mashed potatoes (leftover or freshly made)
– 1/2 cup shredded cheddar cheese
– 1/4 cup cooked and crumbled bacon
– 2 green onions, finely chopped
– 1/4 teaspoon garlic powder
– Salt and pepper to taste

– 1 cup all-purpose flour
– 2 large eggs, beaten
– 1 1/2 cups panko breadcrumbs
– Vegetable oil, for frying

 Instructions:

1. **Prepare the Mashed Potato Mixture:**
– In a large bowl, combine the mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

2. **Form the Potato Balls:**
– Using your hands or a small ice cream scoop, form the mashed potato mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.

3. **Bread the Potato Balls:**
– Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
– Roll each potato ball in the flour, then dip in the beaten eggs, and finally coat with panko breadcrumbs. Ensure each ball is fully coated.

4. **Fry the Potato Balls:**
– In a large deep skillet or a deep fryer, heat the vegetable oil to 350°F (175°C).
