 Ingredients:

  • 1 large eggplant
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh basil, finely chopped
  • 2 eggs
  • 1/2 cup milk (or dairy-free milk for a vegan option)
  • 2 tablespoons olive oil Olive
  • Optional toppings: Greek yogurt sauce, sour cream or tzatziki for serving

 Instructions:

  1. Preheat the oven to 200°C (400°F).Line a baking tray with baking paper.
  2. Wash the eggplant and cut it into thin slices, about 1/4 inch thick. Place the slices in a single layer on the prepared baking sheet.

3.Roast the eggplant slices in the preheated oven for 15-20 minutes,  until soft and lightly browned. Remove from the oven and let  cool slightly.

  1. In a large bowl, mix together the flour, baking powder, salt and black pepper.

5.Once the roasted eggplant slices have cooled, cut them into smaller pieces and add them to the flour mixture in the bowl.

  2. In a separate bowl, beat eggs and milk until smooth.Add the egg-milk mixture to the flour-aubergine mixture and stir until a thick dough forms.
  3. Heat the olive oil in a large skillet or griddle over medium-high heat. Once the pan is hot, pour the batter over the pan to form pancakes. Use about 1/4 cup of batter for each pancake.

9.Cook the pancakes for 2-3 minutes on each side or until  golden brown and cooked through.
