There is one drink that always reminds me of the warm summer afternoons spent on the porch full of stories and flavors: the piña colada.Born on the sunny beaches of Puerto Rico, this tropical delight has captured the hearts of people all over the world. It’s a delicious blend of creamy coconut, spicy pineapple and smooth rum that transports you to a tranquil beach with every bubbly sip. Imagine mixing this mixture as fireflies flicker and corn stalks rustle in the evening breeze. Making a piña colada is more than just a cure for the heat; It’s about creating precious memories.

Servings: Approximately 4 generous servings

Ingredients

1 cup light rum

2 cups frozen pineapple chunks

1/2 cup coconut cream

1/4 cup pineapple juice

1/2 cup Ice Cream

Pineapple slices and maraschino cherries for garnish

Instructions:

Start with your trusty blender and pour in the light rum and pineapple juice.

Add the frozen pineapple pieces and the creamy coconut cream.

Add ice, but just enough to not dilute the flavor.Blend on high speed until creamy and smooth. If the ice cream is hard to get, stop, stir and blend again.

Serve the piña coladas in previously chilled glasses to give them an extra icy touch.

Garnish each glass with a pineapple slice and a maraschino cherry for the perfect finishing touch.

For an equally tropical non-alcoholic version, leave out the rum and add more pineapple juice.If you’re watching your diet, replace the coconut cream with coconut milk to give it a lighter touch.

For an extra touch, mix with fresh mint leaves or a touch of ginger.

If you are lucky enough to have fresh pineapple, use it instead of frozen. Remember to freeze it first to get the characteristic mushy consistency.
