Classic Gazpacho

 

 

Ingredients:

  • 1 cup diced red bell peppers
  • 1 cup diced onions
  • 1 cup diced green bell peppers
  • 4 ripe tomatoes, diced
  • 1 cucumber, peeled and diced
  • 2 cloves garlic, minced
  • 3 cups tomato juice
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the diced tomatoes, cucumber, red bell peppers, green bell peppers, and onions.
  2. Add the minced garlic, tomato juice, olive oil, and red wine vinegar.
  3. Season with salt and pepper, and mix well.
  4. Refrigerate the soup for at least 2 hours to let the flavors meld.
  5. Serve cold, garnished with additional diced vegetables or croutons if desired.
