CHICKEN LO MEIN

 

 

Chicken Lo Mein is a popular Chinese-American dish that combines tender chicken strips  with vegetables and noodles in a flavorful sauce. It’s a versatile one-pot meal that’s perfect for weeknights. Below we explain how to make Chicken Lo Mein at home, bringing the flavors of your favorite Chinese restaurant into your kitchen.

 Ingredients:

 FOR THE CHICKEN AND MARINADE:

  • 1 pound chicken breast, thinly sliced ​​
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch

 FOR THE LO MEIN:

  • 8 ounces lo mein noodles or spaghetti
  • 2 tablespoons vegetable oil, divided
  • 2 cloves garlic, minced
  • 1 medium carrot, julienned
  • 1 bell pepper, thinly sliced ​​
  • 1/2 cup snow peas or snow peas
  • 1 /2 cup mushrooms, sliced ​​(optional)
  • 2 spring onions, chopped
  • Additional vegetables as desired (e.g., cabbage, broccoli)

 FOR THE SAUCE:

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon ground ginger
  • 1/2 cup chicken broth or water

 Instructions:

 

 Marinate chicken:

  • In a bowl, mix chicken slices with 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sesame oil and 1 teaspoon cornstarch. Mix well and let marinate for at least 15 minutes.
  1. PREPARE NOODLES:
  • Cook lo mein noodles according to  package instructions until  tender. Drain and reserve.If using spaghetti, cook it al dente.
  1. PREPARE SAUCE:
  • In a small bowl, stir together 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sesame oil, 1 teaspoon sugar, 1/2 teaspoon ground ginger and broth. chicken or water. Put aside.

 4.COOK  CHICKEN:

  • Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and sauté until cooked through and no longer pink. Remove  chicken from pan and set aside.
  1. FRY THE VEGETABLES:
  • In the same pan, add the remaining tablespoon of vegetable oil.Add garlic, carrot, bell pepper,  peas, mushrooms (if using) and any other vegetables you use. Sauté for a few minutes until the vegetables are crispy and tender.
  1. COMBINE CHICKEN, VEGETABLES AND PASTA:
  • Add the cooked chicken back to the pan with the vegetables. Add the cooked pasta and prepared sauce.Stir everything  over medium heat until the pasta is warmed through and everything is well coated with the sauce.
  1. SERVE:
  • Transfer chicken lo-mein to serving platter or  large plate. Garnish with chopped spring onions. Serve hot.Tips:
  • Choice of Noodles: Although lo mein noodles are traditional, spaghetti or linguini can be a good substitute if you can’t find them.
  • Vegetable Variations: Feel free to use whatever vegetables you have on hand. Chicken Lo Mein is a fantastic dish to clean out the fridge.
  • Adjust sauce: Taste the dish before serving and adjust seasonings if necessary. If you like it spicier, add a dash of hot sauce or flakes.
