Chicken Gyros with Tzatziki Sauce

 

 

Ingredients:

**For the Chicken Marinade:**
– 1 1/2 pounds boneless, skinless chicken breasts
– 3 tablespoons olive oil
– 3 tablespoons lemon juice
– 3 cloves garlic, minced
– 1 teaspoon dried oregano
– 1 teaspoon dried thyme
– 1 teaspoon ground cumin
– Salt and pepper to taste

**For the Tzatziki Sauce:**
– 1 cup Greek yogurt
– 1 cucumber, grated and excess water squeezed out
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– 1 tablespoon lemon juice
– 1 tablespoon chopped fresh dill
– Salt and pepper to taste

**For Serving:**
– Pita bread or flatbreads
– Sliced tomatoes
– Sliced red onions
– Fresh parsley, chopped

 Instructions:

1. **Marinate the Chicken:**
– In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, ground cumin, salt, and pepper.
– Add the chicken breasts to the bowl and coat them in the marinade.
– Cover and refrigerate for at least 1 hour, preferably overnight for best results.

2. **Prepare the Tzatziki Sauce:**
– In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, chopped fresh dill, salt, and pepper.
– Mix well and refrigerate until ready to use.

3. **Cook the Chicken:**
– Preheat a grill or grill pan over medium-high heat.
– Remove the chicken from the marinade and grill for about 6-8 minutes per side, or until the chicken is cooked through and has nice grill marks.
– Let the chicken rest for a few minutes, then slice into strips.

4. **Assemble the Gyros:**
– Warm the pita bread or flatbreads on the grill or in a skillet.
– Place the sliced chicken on the warmed pita bread.
– Top with a generous amount of tzatziki sauce.
– Add sliced tomatoes, red onions, and a sprinkle of fresh parsley.

5. **Serve:**
– Serve the chicken gyros immediately, with additional tzatziki sauce on the side if desired.
