Cherry Pistachio Cheesecake Bars

 

 

 Ingredients:

**For the Crust:**
– 1 1/2 cups (150g) graham cracker crumbs
– 1/2 cup (115g) melted butter
– 1/4 cup (50g) granulated sugar

**For the Cheesecake Filling:**
– 16 oz (450g) cream cheese, softened
– 1 cup (200g) granulated sugar
– 1 teaspoon vanilla extract
– 1 cup (240ml) heavy cream

**For the Cherry Topping:**
– 2 cups fresh or frozen cherries, pitted and halved
– 1/2 cup (100g) granulated sugar
– 1 tablespoon cornstarch
– 1/4 cup (60ml) water
– 1 teaspoon lemon juice

**For the Garnish:**
– 1/2 cup (75g) chopped pistachios

 Instructions:

1. **Prepare the Crust:**
– Preheat your oven to 350°F (175°C).
– In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
– Press the mixture into the bottom of a 9×13-inch (23x33cm) baking dish to form an even layer.
– Bake for 10 minutes and let it cool completely.

2. **Prepare the Cheesecake Filling:**
– In a large mixing bowl, beat the cream cheese until smooth.
– Add the granulated sugar and vanilla extract, and continue to beat until creamy.
– Gradually add the heavy cream and beat until the mixture is thick and smooth.
– Spread the cheesecake filling evenly over the cooled crust. Refrigerate for at least 2 hours, or until set.

3. **Prepare the Cherry Topping:**
– In a medium saucepan, combine the cherries, granulated sugar, cornstarch, water, and lemon juice. Stir well.
– Cook over medium heat, stirring frequently, until the mixture thickens and the cherries are soft, about 5-7 minutes.
– Remove from heat and let it cool completely.

4. **Assemble the Cheesecake Bars:**
– Once the cherry topping has cooled, spread it evenly over the cheesecake layer.
– Sprinkle the chopped pistachios on top.

5. **Chill and Serve:**
– Return the assembled dessert to the refrigerator and chill for at least 2 hours, or until fully set.
– Slice into bars and serve chilled.
