Bacon: 3-4 strips, cooked and mashed ( possibly extra flavor, cook in pan until tender, drain, drain and set aside.
Chopping and Slicing: Prepare your potatoes, onions and any other vegetables you have on hand.
2. Cook POTATOES AND ONIONS:
Heat the oil: Heat the butter and olive oil in a large skillet over medium heat.
Saute the onions: Add the chopped onion to the pan and cook until soft and tender, about 3-5 minutes.
Add the garlic: Add the minced garlic and cook for another minute until fragrant.
Cook the potatoes: Add the potatoes, distribute evenly and cook without stirring for a few minutes until browned on one side. Then turn the pan to the lowest setting, add salt, pepper, and paprika and continue cooking, stirring occasionally, until the potatoes are soft and golden brown, about 10-15 minutes. Add the peppers and mushrooms, if using, after cooking for a few minutes.
3. Add CHEESE AND POWDER:
Add cheese: After the potatoes are cooked, sprinkle finely grated cheddar cheese on them. Cover the pan with a lid to allow the cheese to melt, about 2-3 minutes.
Garnish: Sprinkle cooked, crumbled bacon and chopped green onions over melted cheese.
