Cheesecake with Berry Sauce





**For the Cheesecake:**
– 2 cups of graham cracker crumbs
– 1/2 cup of melted butter
– 3 packages (8 ounces each) of cream cheese, softened
– 1 cup of granulated sugar
– 1 teaspoon of vanilla extract
– 3 large eggs
– 1 cup of sour cream
– 1/4 cup of all-purpose flour


**For the Berry Sauce:**
– 2 cups of mixed berries (strawberries, blueberries, raspberries, or blackberries)
– 1/2 cup of granulated sugar
– 1 tablespoon of lemon juice
– 1 tablespoon of cornstarch mixed with 2 tablespoons of water


**For the Cheesecake:**
1. Preheat the oven to 325°F (165°C).
2. In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
3. In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and continue beating until well combined. Add the vanilla extract.
4. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and flour until just combined.
5. Pour the batter over the crust in the springform pan.
6. Bake in the preheated oven for about 55-60 minutes, or until the center is almost set. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about an hour.
7. Refrigerate for at least 4 hours or overnight.

**For the Berry Sauce:**
1. In a medium saucepan, combine the berries, sugar, and lemon juice. Cook over medium heat until the berries release their juices and the mixture comes to a boil.
2. Reduce the heat and let it simmer for about 5 minutes.
3. Stir in the cornstarch mixture and cook for another 1-2 minutes, or until the sauce thickens.
4. Remove from heat and let it cool.

**To Serve:**
1. Slice the cheesecake and drizzle the berry sauce over the top.
2. Optionally, you can garnish with fresh berries and whipped cream.
