 Ingredients:

– 4 cups fresh broccoli florets
– 1 cup grated carrots
– 1/4 cup diced onions
– 2 cloves garlic, minced
– 4 cups chicken or vegetable broth
– 2 cups half-and-half or milk
– 1/4 cup all-purpose flour
– 3 cups sharp cheddar cheese, grated
– Salt and pepper to taste
– 2 tablespoons butter
– 1 tablespoon olive oil

1. **Prepare the Vegetables:**
– Steam or blanch the broccoli florets until tender, then chop them into bite-sized pieces.
– Grate the carrots and set aside.
– Dice the onions and mince the garlic.

2. **Cook the Vegetables:**
– In a large pot, heat the olive oil and butter over medium heat.
– Add the diced onions and sauté until translucent.
– Add the minced garlic and sauté for another 1-2 minutes.

3. **Create the Base:**
– Sprinkle the flour over the onions and garlic, stirring continuously to create a roux.
– Slowly add the chicken or vegetable broth, whisking to avoid lumps.
– Bring the mixture to a simmer and cook until it starts to thicken.

4. **Add the Dairy:**
– Slowly add the half-and-half or milk, stirring constantly until well incorporated.
– Continue to simmer the mixture until it thickens, about 5-7 minutes.

– Add the chopped broccoli and grated carrots to the pot.
– Stir in the grated cheddar cheese, a handful at a time, until fully melted and the soup is smooth.

– Allow the soup to simmer for an additional 10-15 minutes to blend the flavors.
