Blackberry Cobbler Recipe

 

Ingredients:

• 4 cups fresh blackberries (you can also use frozen, thawed)
• 1 cup granulated sugar (plus 2 tablespoons for topping)
• 1 tablespoon lemon juice
• 1 cup all-purpose flour
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 cup milk
• 1/2 cup unsalted butter, melted
• 1 teaspoon vanilla extract (optional)
• Vanilla ice cream (for serving, optional)

Instructions:

1. Preheat Oven:

• Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or a similarly sized dish.
2. Prepare the Berries:

• In a large bowl, gently toss the blackberries with 1 cup of sugar and the lemon juice. Let sit while you prepare the batter.
3. Make the Batter:

• In another bowl, whisk together the flour, baking powder, and salt.
• Add the milk, melted butter, and vanilla extract (if using). Stir until the batter is smooth and well combined.
4. Assemble the Cobbler:

• Pour the batter into the prepared baking dish.
• Spoon the blackberry mixture evenly over the batter. Do not stir; the batter will rise up around the berries as it bakes.
5. Bake:

• Sprinkle the remaining 2 tablespoons of sugar over the top of the cobbler.
• Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
6. Serve:
