Equipment:
Large pot or pan
Knife and cutting board
Measuring cups and spoons
Directions:
Use the beef:
Heat the olive oil in a large skillet or oven over high heat. .
Add the beef and season with salt and pepper. Cook for about 5-7 minutes until the meat is browned on all sides. Remove the beef from the pan and set aside.
Saute vegetables:
Add chopped onion, garlic, carrots and celery to a pan. Cook until vegetables begin to soften, 5 minutes.
Add dried thyme and rosemary and cook for 1 minute until fragrant.
Deglaze and cook:
Add a small amount of beef stock to the pan to deglaze and scrape up any black bits from the bottom.
Return the meat to the pan with the remaining broth and bay leaf. Bring to boil.
Add barley and cook:
Stir in barley, reduce heat to low, and simmer, covered, until barley is tender, about 1 hour.
Season and add peas:
Taste and adjust salt and pepper if necessary. If using
, add frozen peas during the last 10 minutes of cooking.
Operation:
Remove and discard the windshield.
Pour the soup into bowls and garnish with chopped parsley, if desired.
Tip:
Beef Selection: Chuck Roast is best for this soup because it tastes best when cooked. However, you can use other parts of the cooked meat if you wish.
Barley Varieties: Barley is perfect for soups because it’s always quick and has a delicious, smooth flavor. Note that if you use whole grains, they may take longer to cook.
