Ingredients:

– 4 cups zucchini, thinly sliced
– 1 medium onion, chopped
– 1 tablespoon olive oil
– 6 large eggs
– 1 cup milk
– 1 cup shredded cheddar cheese
– 1/2 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon garlic powder
– 1/2 teaspoon dried basil
– 1/2 teaspoon dried oregano
– 2 cups cubed bread (preferably day-old)

Instructions:

 

1. **Preheat the Oven**:
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter or cooking spray.

2. **Sauté the Vegetables**:
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent. Add the zucchini slices and cook until they are tender, about 5-7 minutes. Remove from heat and let cool slightly.

3. **Prepare the Egg Mixture**:
In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, dried basil, and dried oregano until well combined.

4. **Combine Ingredients**:
Add the sautéed zucchini and onion mixture to the egg mixture. Stir in the cubed bread, making sure all pieces are well coated. Add the shredded cheddar, mozzarella, and Parmesan cheeses, reserving a small amount of each for topping.
