The creamy lemon squares with a perfect combination of rich lemon filling and a crunchy graham cracker base promise a tempting mix of sweet and sour.  Creamy Lemon Squares Recipe:

 Ingredients:

1 can (14 ounces)  sweetened condensed milk

2 egg yolks

1/2 cup fresh lemon juice

For the base:

1.5 cups crushed whole wheat crackers

1/4 cup sugar

4 tablespoons butter, melted and cooled

 

 PREPARATION:

Preheat your oven to  350°F (175°C). Prepare a 20 x 20 cm baking dish by  greasing it with butter or lining it with baking paper.

Mix together crust ingredients: melted butter, graham cracker crumbs, and sugar until  a consistency similar to wet sand is formed.Press this mixture evenly and firmly into the bottom of the baking dish. Bake for about 10 minutes or until  light golden in color. Let cool for half an hour.

For the filling, mix the egg yolk and  condensed milk well in a separate bowl.

While stirring, slowly add the fresh lemon juice to this mixture, making sure it is smooth and delicious.Pour this lemon mixture over the pre-baked crust, making sure it is evenly distributed.

Bake for a further 15 minutes or until set. After baking, let cool and rest for at least 1 hour.

If you used baking paper, lift out the lemon squares and then cut them into desired portions.
