Vegetable Noodle Soup

 

 

Ingredients:

– 2 tablespoons olive oil
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 2 large carrots, diced
– 2 celery stalks, diced
– 2 medium potatoes, peeled and diced
– 1 cup diced tomatoes (canned or fresh)
– 6 cups vegetable broth
– 1 teaspoon dried thyme
– 1 teaspoon dried basil
– Salt and pepper, to taste
– 1 cup egg noodles or vermicelli
– 1/4 cup chopped fresh parsley

1. **Prepare the Vegetables:**
– In a large pot, heat the olive oil over medium heat.
– Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
– Add the diced carrots, celery, and potatoes. Cook for an additional 5-7 minutes, stirring occasionally.

2. **Add the Broth and Seasonings:**
– Stir in the diced tomatoes, vegetable broth, dried thyme, and dried basil.
– Season with salt and pepper to taste.
– Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 20 minutes, or until the vegetables are tender.

3. **Add the Noodles:**
– Stir in the egg noodles or vermicelli.
– Continue to cook for about 5-7 minutes, or until the noodles are cooked through.

4. **Finish and Serve:**
– Stir in the chopped fresh parsley.
– Taste and adjust the seasoning if needed.
– Serve hot, garnished with additional parsley if desired.
