 Two-Layer Strawberry and Vanilla Mousse

 

 Ingredients:

**For the Vanilla Mousse:**
– 1 cup heavy cream
– 1/4 cup sugar
– 1 tsp vanilla extract
– 1 packet (1 tbsp) unflavored gelatin
– 2 tbsp cold water

**For the Strawberry Mousse:**
– 1 cup heavy cream
– 1/4 cup sugar
– 1 tsp strawberry extract (or 1/2 cup pureed fresh strawberries)
– 1 packet (1 tbsp) unflavored gelatin
– 2 tbsp cold water
– A few drops of red food coloring (optional)

1. **Prepare the Vanilla Mousse:**
– In a small bowl, sprinkle the gelatin over the cold water and let it sit for a few minutes to bloom.
– Heat the bloomed gelatin in the microwave for about 10 seconds until it dissolves.
– In a mixing bowl, whip the heavy cream and sugar until soft peaks form.
– Add the dissolved gelatin and vanilla extract to the whipped cream and continue whipping until stiff peaks form.
– Pour the vanilla mousse into a glass dish or individual serving cups and refrigerate for about 1 hour or until set.

2. **Prepare the Strawberry Mousse:**
– Repeat the gelatin blooming process as in the vanilla mousse.
– If using fresh strawberries, puree them in a blender until smooth.
– Heat the bloomed gelatin in the microwave for about 10 seconds until it dissolves.
– In a mixing bowl, whip the heavy cream and sugar until soft peaks form.
– Add the dissolved gelatin, strawberry extract or puree, and food coloring (if using) to the whipped cream and continue whipping until stiff peaks form.
– Pour the strawberry mousse on top of the set vanilla mousse layer and refrigerate for another hour or until completely set.

3. **Serve:**
– Once both layers are set, the dessert is ready to be served. Garnish with fresh strawberries or whipped cream if desired.
