Strawberry Mousse

 

 

Ingredients

– 1 pound (450g) fresh strawberries, hulled
– 1/2 cup granulated sugar
– 1 tablespoon lemon juice
– 2 teaspoons unflavored gelatin
– 2 tablespoons cold water
– 1 cup heavy whipping cream, chilled
– 1 teaspoon vanilla extract
– Fresh strawberries for garnish (optional)

1. **Prepare the Strawberry Puree:**
– Place the strawberries, sugar, and lemon juice in a blender or food processor. Blend until smooth.
– Pass the puree through a fine-mesh sieve to remove seeds, if desired.

2. **Bloom the Gelatin:**
– In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.

3. **Heat the Gelatin:**
– In a small saucepan, heat the bloomed gelatin over low heat until it dissolves completely, stirring constantly. Do not let it boil.
– Remove from heat and let it cool slightly.

4. **Combine Puree and Gelatin:**
– Stir the dissolved gelatin into the strawberry puree until well combined. Set aside.

5. **Whip the Cream:**
– In a large mixing bowl, beat the heavy whipping cream and vanilla extract until stiff peaks form.

6. **Fold the Mixture:**
– Gently fold the strawberry puree into the whipped cream until fully incorporated and smooth. Be careful not to deflate the whipped cream.

7. **Chill the Mousse:**
– Spoon or pipe the mousse into serving glasses or bowls.
– Refrigerate for at least 2 hours or until set.

8. **Serve:**
– Garnish with fresh strawberries if desired.
