1 cup chopped fresh spinach
1/ 2 water cup chopped artichoke hearts, drained and chopped
1/2 cup cream cheese, softened
1/4 cup grated Parmesan cheese
1/4 cup grated mozzarella
2 cloves garlic, finely chopped
Salt and pepper to taste pepper sauce
Garnish:

1/2 cup grated mozzarella
Optional: Paprika or Italian herbs for extra flavor
Directions: Preheat the oven:
Preheat the oven to 190°C.
Prepare the filling:
In a medium-sized mixing bowl, combine chopped spinach, chopped artichokes, cream cheese, Parmesan cheese, mozzarella, and minced garlic.
Season with salt and pepper. Mix until everything is well combined.
Prepare the chicken:
Place the chicken fillets on the plate. Use a sharp knife to cut a pocket on the side of each breast. Be careful not to cut the entire path.
Season the inside and back of each chicken breast with salt and pepper.
Chicken Stuffing:
Spoon the spinach-artichoke mixture thoroughly into the pockets of each chicken breast.
If necessary, protect the opening with threads to prevent filling.
Cook the chicken:
Heat the olive oil in a large skillet over medium heat.
Grill whole chicken breasts for 2-3 minutes per side or until golden brown.
Fried chicken:
Sprinkle mozzarella over each chicken breast and add a pinch of chili powder or Italian herbs, if desired.
Place the roasting pan in the hot oven.
Bake for 20-25 minutes or until chicken is cooked through and internal temperature reaches 175°F.
Preparation:
Remove the teeth and let the chicken rest for a few minutes to drain before serving.
Serve hot, optionally sprinkled with Parmesan cheese or fresh herbs.
Tips for perfection:
Do not stuff: Be careful not to stuff the chicken breasts; otherwise the filling may spill out during cooking.
To preserve the chicken: Using a toothpick to open the stuffed chicken breast ensures all the delicious filling stays inside while it cooks.
Checking Internal Temperature: Using a meat thermometer to check the internal temperature of the chicken will ensure it is cooked thoroughly without overcooking.
This stuffed chicken breast with spinach and artichokes is not only delicious and filling, it’s also a delicious side dish for a special occasion or midweek meal. Enjoy your meal with roasted vegetables or a fresh salad for a complete meal!
