Savory Egg, Bacon, and Onion Pie

 

 

Ingredients:

**For the Crust:**
– 1 1/2 cups all-purpose flour
– 1/2 tsp salt
– 1/2 cup cold unsalted butter, cubed
– 1/4 cup cold water

**For the Filling:**
– 4 large eggs, hard-boiled and halved
– 1 cup diced bacon or pancetta
– 1 medium onion, thinly sliced
– 1/2 cup black olives
– 1/2 cup corn kernels (optional)
– 1 cup shredded cheese (cheddar or mozzarella)
– 3 large eggs
– 1 cup heavy cream
– Salt and pepper to taste

Instructions:

1. **Prepare the Crust:**
– In a large bowl, combine the flour and salt. Add the cold butter and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
– Add the cold water, a little at a time, until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
– Preheat the oven to 375°F (190°C).

2. **Prepare the Filling:**
– In a skillet over medium heat, cook the diced bacon or pancetta until crispy. Remove from the skillet and drain on paper towels.
– In the same skillet, sauté the sliced onion until soft and translucent. Set aside.

3. **Assemble the Pie:**
– On a lightly floured surface, roll out the chilled dough into a circle large enough to fit into a 9-inch pie dish. Transfer the dough to the pie dish and trim any excess dough.
– Sprinkle the shredded cheese evenly over the bottom of the crust.
– Arrange the halved hard-boiled eggs, cooked bacon, sautéed onions, black olives, and corn kernels (if using) over the cheese.
– In a medium bowl, whisk together the 3 large eggs and heavy cream. Season with salt and pepper to taste. Pour the egg mixture over the filling in the pie crust.

4. **Bake the Pie:**
– Bake in the preheated oven for 35-40 minutes, or until the filling is set and the crust is golden brown.
– Remove from the oven and let cool slightly before serving.
