Pupusas (Salvadoran Stuffed Flatbread)

**Ingredients:**

– 2 cups masa harina (corn flour)
– 1 ½ cups warm water
– 1 cup shredded mozzarella cheese (or a combination of mozzarella and another cheese)
– 1/2 cup refried beans (optional)
– 1/2 cup finely chopped cooked pork (optional)
– Salt to taste

**Instructions:**

1. In a large mixing bowl, combine the masa harina and warm water. Mix until a dough forms. If the dough is too dry, add a little more water; if it’s too wet, add a bit more masa harina.
2. Knead the dough for about 5 minutes until smooth.
3. Divide the dough into small balls, about the size of a golf ball.
4. Flatten each ball into a disc about 4 inches in diameter.
5. Place a small amount of cheese, beans, and/or pork in the center of each disc.
6. Fold the edges of the disc over the filling, pinching to seal, and then gently flatten the filled dough back into a disc.
7. Heat a non-stick skillet or griddle over medium-high heat.
8. Cook the pupusas for about 2-3 minutes on each side, or until golden brown and slightly crispy.

Arepas (Venezuelan/Cuban Stuffed Corn Cakes)

**Ingredients:**
– 2 cups pre-cooked white or yellow cornmeal (masa harina)
– 2 1/2 cups warm water
– 1 teaspoon salt
– 1 cup shredded cheese (optional)
– Filling options: shredded chicken, beef, beans, avocado, cheese, etc.

**Instructions:**

1. In a large bowl, mix the cornmeal, water, and salt. Let the mixture sit for 5 minutes.
2. Knead the dough until smooth and not sticky. If it’s too dry, add more water; if too wet, add more cornmeal.
3. Divide the dough into small balls and flatten into discs about 1/2 inch thick.
4. Heat a lightly oiled skillet over medium heat.
5. Cook the arepas for about 5-7 minutes on each side until they are golden and cooked through.
6. Slice open and fill with your desired ingredients.
